_Aspects to take into consideration before building a commercial kitchen:

1)Available space: make the most of the space you have without sacrificing work flow and speed.
Rule: Allow 5sq feet of  kitchen for every seat in the restaurant.

2)Employee Mobility: they have to be able to move easily without bumping into each other.

3)Health codes: Ex. Most health departments require there to be a floor drain 6feet from an ice machine.

4) Ergonomics: Take into consideration the amount of steps an employee has to take to be able to complete their task. The fewer the better. The best position to work in would be standing and having to move, bend, turn, reach, etc, the minimum possible.

5)Energy Efficient: Should be a primary consideration as it saves money on utility costs. Energy efficiency includes having the refrigerating equipment and the cooking equipment as far as possible.

6)Flexibility: A change in the menu could affect the equipment use and placement, and it should also be easy to move to be able to clean!




_What Employers can do to Protect Employees:

-Two double swing doors with windows on the entrance to the kitchen
-Install ceiling outlets to plug the equipment to the cords are not in the middle of their path and to prevent electrocution
-No carpets in the kitchen and if there is a mat make sure it does not present a tripping hazard.
-Use non-slip mats or waxes
-Provide sufficient dreinage
-Place mirrors at blind corners
-Place adequate lighting
-Non-slip shoes should be mandatory
